Inspired by the Valencian dish paella, this easy dish will give you a taste of Spain from your own kitchen. Using pre-prepared mixed seafood makes this healthy rice dish very easy to put together. Plus, using one pot means you save on washing up!
Pairs with: ¡H! Barcelona Hola Organic Cava Brut NV, a fruity fizz that combines the know-how of Champagne’s sparkling experts with the flavours of the organic Spanish grapes chosen to create this Cava. Aged for 12 months, you’ll taste green fruits and grapefruit alongside some herbal notes.
Enjoy fillet steak with sauce for a healthy dinner that also boasts sweet potato fries, spinach and cherry tomatoes. You’ll be getting all of your 5-a-day with the peppery sauce that complements the richness of the beef.
Pairs with: Bleasdale The Wild Fig Langhorne Creek Shiraz Grenache Mourvedre, from the second oldest family winery in Oz! This comes from a cooler climate region, so the wines – even the reds – have a natural freshness to balance the notes of chocolate and earthiness.
If you need something for a family feast, a roast leg of lamb is always a showstopper. While they can be a vehicle for experimentation and bringing in inspiration from other cuisines (see below recipe), sometimes you just want the classic version. It’s ideal served with roasties and your favourite spring vegetables for a Sunday roast.
Pairs with: Limited Release Margaret River Cabernet Merlot, hailing from a family run boutique winery in Western Australia. Margaret River was crowned the top performing wine region in the world at the 2025 IWSC Awards, but produces just 2% of Australian wines, so you know you’re in for a treat with this limited release of silky cassis and black plums with hints of cedar, mocha and spice.
While this might not quite be a Moroccan mechoui-style lamb (cooked underground very low and very slow), this barbecued leg of lamb is covered with herbs and spices often found in the cuisine. Mary Cadogan’s recipe also butterflies the meat for a faster cook – your butcher can do this for you if you’re not confident. Serve with a harissa yogurt sauce for a tangy accompaniment.
Pairs with: Altos de la Guardia Crianza Rioja, from a Bordeaux-born Trophy award-winning winemaker who decided to start his own winery 20 years ago and has won over 300 Golds since! This Rioja has won Trophy for ‘Best Red over £10’ plus 14 Golds over its last five vintages, delivering an elegant red packed with tangy cherry fruit, dark chocolate and violet edge.
Spaniards are very protective of what constitutes a paella – it’s part of the Catalan cultural heritage, so rightly so! We don’t call this dish a paella but it is certainly inspired by one, filled with Mediterranean holiday flavours. It’s a quick, easy one pot dish ready to enjoy for a wholesome dinner any night of the week.
Pairs with: Lime Leaf Verdejo, a lesser-known but very highly regarded grape in Northwestern Spain, whose name gives you an idea of the taste. Similar to a Sauvignon in freshness, this cuvée was actually grown in central Spain on the plains of La Mancha, its citrus flavours and stoney freshness pairing well with a fresh seafood dish.
While you might not associate a stew with spring and summer dishes, the use of fresh white fish and some lifting herbs and spices make this easy, flavour-packed stew a year-round favourite. Perfect with crusty bread and easy to scale up for a crowd.
Pairs with: Delicado Fino Sherry, a fortified wine that is perfect to sip alongside the salty fish. Aged for six years, Fino sherries are curated from the very best cuvées and develop yeasty, nutty flavours with hints of the sea and minerality.
Sardines on toast may conjure up a sad meal of soggy bread under tinned fish, but this version is levelled up and is a fresh, wholesome dish that will bring the taste of the Med to your plate. The key is good-quality sardines and fresh herbs and spices, with whatever your favourite bread is.
Pairs with: Kew Gardens Albillo, made from an almost forgotten Spanish grape in collaboration with the Royal Botanic Gardens, Kew. Albillo is grown along the banks of the river Pisuerga in Spain’s Castilla y León, and this vintage has enjoyed six months aging to add roundness to the pear and delicate peach notes with citrus and blossom.
